Semana Santa & Fanesca Feasts in Ecuador
In all three schools the mums, volunteers and children all got down to the busy task of preparing Fanesca, a typical dish here in Ecuador. Fanesca is only eaten over Semana Santa (Easter) and draws together the local community and family in its making.
Ingredients included: beans, chocos, frijoles, corn, pumpkin & gourd - of two different varieties -, carrots, onions, tomatoes, spring onions, and dried salt cod cooked in milk. To finish it of top with avocado, eggs, fried plantain, and ‘bolitos’ of flour fried up nice!
